Sweet Potato & Quinoa Chili

In a slow cooker, combine:

2 medium sweet potatoes, thinly sliced
1 onion, thinly sliced
4 cloves of garlic, sliced
5 stalks of celery, thinly sliced
4 small peppers, sliced
2 jalapeno peppers, sliced
2 green tomatoes, minced
1 cup of quinoa
2 tbsp salt
1 tbsp pepper
2 tbsp smoked paprika
3 tbsp chili powder
6-8 cups water or broth, depending on desired consistency

Simmer on low in slow cooker for 8 hours or cook on high for 2-3 hours
