Kohlrabi Recipes and Storage Tips

Kohlrabi with Horseradish
4 or 5 kohlrabi, about 1 pound, peeled
2 to 4 Tbsp sour cream or plain yogurt
Prepared horseradish in vinegar
2 tsp chopped dill
Salt and freshly milled pepper

Slice the kohlrabi into julienne strips or wedges. Steam until tender , 5 to 8 minutes, then remove to a bowl and toss with sour cream, horseradish, and dill. Season with salt and pepper to taste.

Other notes on using kohlrabi:
- Use kohlrabi like you would turnips.
- It's delicious sliced into thin wedges and sprinkled with sea salt or grated into salads.
- To cook, cut in quarters, rounds, or matchsticks, then steam or roast.
- Goes well with butter, sour cream, dill, mustard, or horseradish.
