Cool Rice and Cucumber Salad 1 ½ cups white rice Salt 1-3 Cucumbers, peeled and chopped ½ cup finely chopped parsley
3 tablespoons chopped dill 2 tablespoons chopped mint ¼ cup finely sliced scallions, incl. greens ¼ cup white wine vinegar 3 tablespoons olive oil ½ cup yogurt Green lettuce leaves
1. Boil
rice (with 2 tspn. salt) in 2 quarts water. Combine cucumbers and herbs. 2. Combine scallions, vinegar, oil and ¼ tspn salt. 3. When rice is done, drain excess water and put into bowl with cucumbers. Add
vinegar dressing and yogurt. Toss gently. 4. Serve with green lettuce leaves as garnish Kris Larson, April 2008
